We wait all year for these glorious days of summer and then we remember what life is like without air conditioning! If you’re like me you enjoy summer’s plentiful garden vegetables. Here’s a great recipe utilizing some of my favorite veggies that does not include cooking over the stove. Make it a complete meal by adding some cooked chicken.

Serves 4 | Serving Size: 1 cup
Try this colorful salad for lunch or dinner. The carrots and Greek yogurt add sweetness, while the peanuts add a nice crunch!
- 3 cups broccoli florets
- 1 cup grated carrots
- 1 cup sliced cauliflower
- 1 cup chopped apples
- 1 cup diced tomatoes
- 1/2 cup sliced green onions
- 1 cup Greek vanilla yogurt
- 1/4 cup roasted chopped peanuts
Toss all ingredients together in a large mixing bowl. Refrigerate until ready to serve, up to 6 hours. Garnish with sprinkled cinnamon and your favorite garden greens.
